Kevin Bouillet settled in Pupillin – a village near Arbois with a well-characterized terroir that earned it the Arbois-Pupillin appellation – in 2018. Drawing on the experience he acquired from Pascal and Évelyne Clairet (Domaine de la Tournelle in Arbois), he took over the family plots, notably in the place called La Marcette, to which were added some purchases of vines, notably in the Côte de Feule, renowned for its Ploussard. On these beautiful, renowned terroirs, he immediately opted for organic farming, without synthetic chemicals, and he carried out fermentations naturally, that is to say with indigenous yeasts and without additives (0 added sulfur, except for a very small dose before bottling). With the grape varieties specific to the Jura vineyard, including the rare and too forgotten red tail melon (a mutation of Chardonnay), he produces beautifully frank vintages that are both lively and delicious.
