A novice, like Yves Roy, who started a new activity in the middle of his life by choosing to settle in his home region, the Jura, in Pupillin, and to become a winemaker in 2019 on plots of vines (5 ha) acquired in 2014. After training at the agricultural high school in Montmorot and with Valentin Morel (Domaine Les Pieds sur Terre in Pupillin), he and his partner Christelle approached viticulture with very specific ideas: cultivation without chemical treatments (organic/biodynamic) and natural vinification without any inputs. The Jura grape varieties – Ploussard and Savagnin in particular – result in frank and natural juices, all pure fruit, in vintages aged in vats and then in barrels. Furthermore, to broaden his palette, he participates in the activity of the small O2Y trading house using harvests from different vineyards.
