Évelyne Clairet
In Arbois, in the heart of the Jura vineyards, Pascal (who passed away in 2021) and Évelyne Clairet embarked on viticulture in 1991 after completing their oenology studies. They established an 8-hectare estate built on the solid foundations of a rigorous and demanding philosophy. Their vines are primarily massal selections, grown on renowned terroirs of marl or limestone scree (such as the Corvées plot near Curon). They take no chances in their organic farming practices, which allow only Bordeaux mixture and sulfur in the vineyard, along with various biodynamic preparations. Their winemaking is entirely natural, without any additives, and the wines are aged for extended periods on fine lees in used barrels. There is no filtration or added sulfur. Without compromise, the clearly stated objective is to produce precise wines, with the utmost accuracy in expressing the terroir. This doesn't prevent the estate from being a pioneer in certain innovations, such as a topped-up Savagnin cuvée (since 1994) and a Savagnin passillé sur pied cuvée (since 1997), which depart from the tradition of Savagnin "under a veil" (a type of flor vine). These wines, with their intense fruit and pronounced minerality, have established the estate among the elite of the Jura region.
