Having transitioned from market gardening to viticulture, Nicolas Jacob trained at Domaine Macle and with Jean-François Ganevat before embarking, in 2015, on the creation of his own estate with an initial hectare of vines located in the small L'Étoile appellation, a discreet vineyard with a rather light terroir of clay and limestone scree, where Chardonnay predominates. With the acquisition in 2019 of several parcels in the Côtes-du-Jura appellation, his vineyard has diversified in terms of grape varieties and terroir types, reaching 6 hectares. The project is based on healthy viticulture without chemical products and natural winemaking followed by extended aging on the lees in barrels or demi-muids. This demanding approach results in a small series of highly exclusive single-vineyard wines, imbued with rare finesse and energy, where the intensity of the juice embraces the minerality of the terroir in a perfectly harmonious balance.
