Leaving Paris and the world of advertising behind, Guillaume Noire chose a lifestyle close to nature and a life of farming. Settling in Rablay-sur-Layon in Anjou, he acquired 3 hectares of vines and, with some expert advice (Mark Angeli, Joël Ménard), produced his first vintages in 2017. Practicing pesticide-free cultivation and winemaking without any additives (perhaps a touch of sulfur at bottling), he emphasizes the pure expression of the grapes, the grape varieties that constitute the primary "elements" defining each wine and that are featured on the various labels. Gentle fermentations, gentle pressing: the desire to prioritize the natural character and the purity of the juice is ever-present and results in remarkably fresh wines.
