Severine Perru & Louis Broderick

Bistro Louis Severine was born from the meeting between Severine Perru and Louis Broderick in New Zealand, during their wine world tour. Severine, former sommelier of the famous Ten Bells in New York where she made her mark on the natural wine scene, and Louis, originally from the family estate Basket Range in the Adelaide Hills in Australia, first produced their first wines in Australia before settling in Alsace in 2023.

Long fascinated by this region, they established their estate there with the support of winemaking friends: Ilona from Ô Fâya Farm in Switzerland, as well as Christian Binner and Yannick Meckert in Alsace. Since 2025, they have owned one hectare of vines. While awaiting their first harvest, they are vinifying Alex Dietrich's grapes: Riesling, Sylvaner, Pinot Noir, and Muscat Ottonel.

Their Riesling comes from the steepest slopes bordering the Grand Cru Frankstein in Dambach-la-Ville, in a terroir surrounded by forest. The vineyard is cultivated using organic and biodynamic methods. Their winemaking reflects their natural approach and creative vision of wine, informed by their experiences and encounters around the world.
