When Stéphane Tissot, with his wife Bénédicte, took over the estate created in Montigny-les-Arsures by his parents in 1962 in 1989, he quickly demonstrated real expertise in the expression of grape varieties through the diversity of Jura terroirs – limestone, clay, marl –, particularly in single-plot vintages. This approach requires promoting soil life and high-quality grapes, soon prompting him, from the end of the 1990s, to move towards organic farming and then biodynamics. With a 50-hectare vineyard and a well-diversified distribution (places, exposures), the estate offers a wide range of vintages that are distinguished by the identity of the terroir, to which the winemaking style is adapted – as natural as possible, without inputs except possibly a minimal dose of added sulfur – and the aging options (vats, barrels, amphorae) according to the winemaker's vision. Among the pioneers who have created the emulation so favorable to the evolution of the Jura vineyard, Stéphane Tissot reveals the exceptional landscape of Revermont through the various grape varieties – chardonnay, savagnin, poulsard, trousseau, pinot noir – and their interpretation in wines of great personality: minerality, freshness, energy.
