Having worked for many years alongside Olivier Cousin, a leading figure in the Anjou wine region, Sylvain Martinez acquired the foundations of healthy, chemical-free viticulture and the fundamentals of natural winemaking. At the same time, starting in 2006, he began cultivating his first vines, which soon expanded to 3 hectares (Chenin Blanc, Pineau d'Aunis, Grolleau, Gamay). In 2016, he established his winery in the semi-troglodytic cellars of the Abbey of Saint-Maur, located in Le Thoureil, between the left bank of the Loire and the surrounding hillsides. Through his practices, free from any excessive intervention, he imbues his wines with a sincerity and purity that allow the fruit and terroir to fully express themselves.
