Having moved from market gardening to viticulture, Nicolas Jacob trained with Domaine Macle and Jean-François Ganevat before embarking, in 2015, on the creation of his own estate with a first hectare of vines located in the small appellation L'Étoile, a discreet vineyard with a rather light terroir of clay and limestone scree where Chardonnay dominates. With the acquisition in 2019 of various plots in the Côtes-du-Jura appellation, his vineyard diversified in grape varieties and types of terroir and reached 6 hectares. The project is based on healthy viticulture without chemicals and natural vinification followed by long aging on lees in barrels or demi-muids. This demanding approach results in a small series of very confidential single-plot vintages, animated by a rare finesse and energy, where the intensity of the juice marries the minerality of the terroir in a balance of perfect harmony.
