In Arbois, in the heart of the Jura vineyards, Pascal (who died in 2021) and Évelyne Clairet began viticulture in 1991 after studying oenology, building an 8-hectare estate based on the solid foundations of a "philosophy" of rigor and high standards. Vines mainly from mass selections, on renowned marl or limestone scree terroirs (such as the Corvées plot under Curon), no approximations in the practice of organic farming that allows only Bordeaux mixture and sulfur in the vineyard as well as various biodynamic preparations, natural vinification without any inputs and long aging on fine lees in used barrels, no filtration or added sulfur. Without compromise, the clearly stated objective is that of precise wines, with the greatest justice of expression of the terroir, which does not prevent the estate from being among the pioneers of certain innovations, such as a cuvée of savagnin ouillé (from 1994) and a cuvée of savagnin passerillé sur vine (from 1997) which break away from the tradition of savagnin "under veil". Wines with intense fruit and assertive minerality which place the estate among the elite of the great names of the Jura.
